I\u2019m more than a little bit partial to a degustation menu. As an indecisive diner who loves food but hates food envy, sampling the very best of what a restaurant menu has to offer is dining at its best.<\/div>\n<\/blockquote>\n<div class=\"pinkLinks\"><!--more--><\/p>\n<p>Throw in matching wines and it\u2019s a match made in gourmet heaven. What\u2019s not to love? No agonising over the menu, just trusting the kitchen and sommelier to deliver the goods.<\/p>\n<p>Thankfully when you place your trust in chef and co-owner Paul Cooper and his team at <a href=\"http:\/\/lastminute.dimmi.com.au\/restaurant\/bishop-sessa?cid=lmau_blog_post\">Bishop Sessa<\/a> in Surry Hills you\u2019re onto a very good thing. The degustation on offer is a six course affair, $65 per person or $110 with matching wines (we went there, it would be rude not to).<\/p>\n<a href=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/306-2044-Edit-e1369617975798.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-23343 size-full\" title=\" \" src=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/306-2044-Edit-e1369617975798.jpg\" alt=\" \" width=\"500\" height=\"333\" srcset=\"https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/306-2044-Edit-e1369617975798.jpg 500w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/306-2044-Edit-e1369617975798-300x199.jpg 300w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/306-2044-Edit-e1369617975798-335x223.jpg 335w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>\n<p>Settling into our table, tucked away in the corner and ideal for a date night, we\u2019re quickly presented with our first beverage, a San Miranda Prosecco NV from King Valley in Victoria. Sparkling is always a winner with me and this hits the spot beautifully.<\/p>\n<p>Course one is a <strong><em>Quail &amp; ginger steamed bun with hoi sin sauce.<\/em><\/strong> Having tried the famous Momofuko steamed buns in NYC, these don\u2019t quite fall into that lofty category but they are fluffy and flavoursome in their own right and I\u2019d certainly order them again.<\/p>\n<a href=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/IMG_4333-e1369618022591.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-23344 size-full\" title=\" \" src=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/IMG_4333-e1369618022591.jpg\" alt=\" \" width=\"500\" height=\"375\" srcset=\"https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4333-e1369618022591.jpg 500w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4333-e1369618022591-300x225.jpg 300w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4333-e1369618022591-72x54.jpg 72w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4333-e1369618022591-335x251.jpg 335w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>\n<p>Next out is a super light<strong><em> Scallop ceviche with cucumber, avocado and a ginger beer sorbet.<\/em><\/strong> I love the addition of the sorbet \u2013 it\u2019s very refreshing, albeit a little summery on a coolish Autumn evening. Served with a glass of Marques de Tezona Macabeo from Spain, we\u2019re informed that in Australia wines such as this are often criticised for being too light but in Spain they\u2019re very popular and I have to agree with the sommelier that it works well with this course.<\/p>\n<a href=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/IMG_4335-e1369618116444.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-23345 size-full\" title=\" \" src=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/IMG_4335-e1369618116444.jpg\" alt=\" \" width=\"500\" height=\"375\" srcset=\"https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4335-e1369618116444.jpg 500w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4335-e1369618116444-300x225.jpg 300w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4335-e1369618116444-72x54.jpg 72w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4335-e1369618116444-335x251.jpg 335w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>\n<p>Two wines down, I\u2019m ready for the next dish to be a little more substantial. The<em><strong> corned pork &amp;poached banana prawn salad, corn, bisque dressing and lemon verbena crackling <\/strong><\/em>steps things up a notch with the unique flavour combinations. It\u2019s matched with a Medhurst Chardonnay from the Yarra Valley. Read on to see it also involves duck and your mouth is set to water. The <em><strong>Roasted Aylesbury duck breast with duck leg sausage roll, baby carrots and an onion and orange marmalade<\/strong><\/em> is highlight so far for me (and Mr LML\u2019s dish of the night). The duck breast is cooked to perfection and combined with the sausage roll and marmalade, it\u2019s comfort food at its best. Moving into reds but once again keeping the wine local, it\u2019s accompanied by an O\u2019Leary Walker Adelaide Hills Pinot Noir.<\/p>\n<a href=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/IMG_4337-e1369618216636.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-23347 size-full\" title=\" \" src=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/IMG_4337-e1369618216636.jpg\" alt=\" \" width=\"500\" height=\"375\" srcset=\"https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4337-e1369618216636.jpg 500w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4337-e1369618216636-300x225.jpg 300w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4337-e1369618216636-72x54.jpg 72w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_4337-e1369618216636-335x251.jpg 335w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>\n<p>Next up is the <strong><em>Potato wrapped smoked red wine braised Wagyu, duck fat roasted parsnips and pine mushrooms<\/em><\/strong>. Just when you thought the meal had hit its peak with the duck course, the melt in your mouth Wagyu is perfection and let\u2019s face it, duck fat roasted anything is going to be a winner. Another Spanish wine accompanies this dish, this time a 2010 Picante Tempranillo Shiraz.<\/p>\n<a href=\"\/\/www.lastminute.com.au\/vc\/blog\/confessions-of-a-degustation-addict\/img_4338-2\/\" rel=\"attachment wp-att-23401\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-23401 size-large\" title=\"        \" src=\"https:\/\/images.trvl-media.com\/media\/content\/expaus\/images\/last-minute\/blog\/uploads\/2013\/05\/IMG_43381-1024x768.jpg\" alt=\"       \" width=\"960\" height=\"720\" srcset=\"https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_43381-1024x768.jpg 1024w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_43381-300x225.jpg 300w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_43381-72x54.jpg 72w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_43381-335x251.jpg 335w, https:\/\/www.lastminute.co.nz\/vc\/blog\/wp-content\/uploads\/2013\/05\/IMG_43381-1050x787.jpg 1050w\" sizes=\"(max-width: 960px) 100vw, 960px\" \/><\/a>\n<p>After five savoury courses (plus house-made sourdough with olive oil because what every six course meal needs is extra carbs ;)) I\u2019m ready for my sweet hit.<\/p>\n<p><em><strong>Chocolate-chip parfait with chocolate mousse, marshmallow and caramelised popcorn<\/strong><\/em> is the triumphant finale with every component made in house. The salty sweet popcorn combined with the rich chocolate is a dessert lover\u2019s heaven. It\u2019s accompanied by a sweet sherry from Spain which we\u2019re told people either love or hate.
